pork, purple-eggplant, basil in spicy bean paste sauce
Pork, Purple-Eggplant, Basil in Spicy Bean Paste Sauce.
Pork - as much as you like
Purple-Eggplant - cut into small cubes
Tomato - 1, finely chopped (optional)
Chillies - 2-3, roughly chopped
Garlic - 1 clove, finely chopped
Oyster Sauce - 3 tablespoons
Soy Sauce - 2 tablespoons
Bean Paste - 2 tablespoons
Olive Oil - 2 tablespoons
a pinch of sugar
in the pan. heat the olive oil with medium hot
add garlic and chillis - cook until the garlic turns yellow
add pork, stirring regulary until pork is cooked
add oyster sauce, soy sauce, bean paste and a pinch of sugar
add chopped tomatoes and a bit of water (1/4 of a cup)
add cubes of eggplant - cover with the lid until the cubes of eggplant are cooked through.
turns off the heat, add basil leaves in.
then its ready to serve with rice or whole grain rice.
