rigatoni with fresh pork sausage

Rigatoni with Fresh Pork Sausage

3-4 of pork sausages
2 tablespoons of extra light & mild olive oil
1/4 of cup of red wine
1 of onion, diced
2-3 of tomatoes, diced
2 cloves of garlic ( finely chopped)
1 cup of passata ( or canned tomatoes, chopped)
1 cup of mushroom / or green beans
1 lb of large rigotoni dry pasta
fresh basil
mixed herbs


in a pan, heat olive oil
add onion, and garlic
add fresh pork sausages and begin to brown for 2-3 mins
add wine and cook until evaporated
add passata
add diced of tomatoes, mushroom, and green beans and cook for 10-15 mins
meanwhile bring water to boil and cook rigatoni for approx. 10-11 mins
drain and toss into the sauce's pan
add fresh basil leave then serve
