Salad Nicoise @ Salon de l'Oriental
Salad Nicoise is my most favourite Salad in the whole World, nothing compares..
I have tired to cook many recipes but the most favourite is, currently, the one from Delia Smith.
Delia Smith's Recipe of Salad Nicoise
Find below her recipe of Salad Nicoise which has been modified a bit to suit my taste.
1 & 1/2 cup of red ripe tomatoes
1 cup of rocket, stalks removed
1 cup of small young cucumber, cut into smallish chunks
2 new potatoes, cooked and sliced
1/2 cup of french beans, cooked
4 shallots, peeled and finely chopped
2 tins tuna fish in oil, well drained /or fresh tuna, seared- medium rare
2 large hard-boiled eggs, peeled and quartered
2 anchovy fillets
1/2 cup black olives
1 tablespoon chopped fresh parsley
For the vinaigrette dressing:
1 level teaspoon sea salt
1 clove garlic, peeled & finely chopped
1 rounded teaspoon mustard powder
1 tablespoon wine or balsamic vinegar
6 tablespoons extra virgin olive oil
2 tablespoons finely chopped fresh herbs (chives, tarragon, parsley, basil, chervil or mint, for example); if using fresh oregano and thyme, use just ½ teaspoon each in the mix
freshly milled black pepper
The rest....., I am sure, you know what you have to do!!
Anyway, the picture below was taken from "Salon de l'Oriental" in Bangkok where the chef cooks a wicked dish of Salad Nicoise.
